Here’s the background. Last summer I went absolutely crazy over a mascarpone soft serve from Mandy at Lady and Pups. The recipe was incredible — silky and rich — and one of my favorite food photos ever. I kept thinking about how to adapt that idea into something chocolatey and hazelnut-y.
I love mascarpone. It gives a luscious creaminess to frozen desserts, so I kept it in this version and tweaked the recipe just a bit. The result is a no-churn Nutella soft serve that’s surprisingly easy to make and simple to serve to guests.

This soft serve does melt like any other soft serve, but it holds up well enough to scoop, pipe, and serve on a warm night. Photographing it was a challenge — it melts fast — but it’s absolutely doable in a home kitchen. You can pipe it for a classic swirl, or simply spoon it into cones. Either way, the flavor is the star.
If you want the pretty swirl, fill a piping bag and pipe into cones. It’s optional and won’t change the taste, but it makes a nice presentation when serving friends or family.
Seriously — Nutella soft serve. Enough said.

Nutella Soft Serve

Ingredients
- 1 1/2 cups whole milk
- 2/3 cup sweetened condensed milk
- 2 (1/4 ounce) envelopes unflavored gelatin
- 1 1/2 cups mascarpone cheese
- 1/3 cup Nutella
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 6 sugar cones for serving
Instructions

Place the whole milk and sweetened condensed milk in a saucepan and heat over medium. When it’s warm and bubbling at the edges, sprinkle the gelatin over the surface and let it sit one minute. Whisk until the gelatin dissolves, then remove from heat.

Whisk in the mascarpone, Nutella, salt, and vanilla until smooth and fully combined. An immersion blender works well here, but vigorous whisking will also do the job.

Pour the mixture into a shallow baking dish (a 9-inch square pan works nicely) and freeze for at least 6–8 hours or overnight, until solid.

Just before serving, cut the frozen block into cubes. Place half the cubes in a food processor and pulse until they break down, then blend until creamy and smooth. It will resemble frozen banana soft serve. If it becomes too soft, chill briefly and resume processing. Repeat with the remaining cubes.

If you like, dip cones into melted Nutella and roll in sprinkles before filling. You can prepare dipped cones ahead and chill them until serving.
