- 1 red bell pepper, thinly sliced
- kosher salt and pepper
- 1 pound lean ground beef
- 4 garlic cloves, minced
- 2 tablespoons minced fresh ginger
- 3 tablespoons honey
- 2 tablespoons soy sauce, plus extra for serving
- 2 tablespoons toasted sesame oil
- 1 tablespoon rice vinegar
- 4 green onions, thinly sliced
- sesame seeds, for topping
- iceberg, romaine or butter lettuce leaves, washed and dried
- 1 carrot, peeled and finely grated
Instructions

Heat the olive oil in a skillet over medium heat. Add the sliced bell pepper and a pinch of salt. Cook, stirring occasionally, until slightly softened, about 3 minutes.

Add the ground beef with another pinch of salt and pepper. Break it up and cook until no longer pink and beginning to crisp. Stir in the garlic and ginger and cook briefly to release their aroma.

In a small bowl, whisk together the honey, soy sauce, toasted sesame oil and rice vinegar. Pour the mixture into the skillet and stir until everything is evenly coated. Cook for 2 to 3 more minutes, then stir in the green onions. Remove from heat.

Ensure the lettuce leaves are clean and dry. Place a small handful of grated carrots in each leaf, top with a few spoonfuls of the beef mixture, and finish with sesame seeds, extra green onions and extra soy sauce if desired.
