It’s popsicle week!
I can hardly wait to tell you about these Snacksicles.
Thank goodness it’s Monday.

Popsicle week was started by Billy of Wit and Vinegar, and this is the third year it’s been running. It’s my first time joining in, and I’m excited to finally participate.

What’s in a Late Night Snacksicle? All the sweet and salty things: buttery crackers, crunchy pretzels, chocolate mini M&M’s and big peanut butter cups, all folded into a vanilla bean graham ice cream-style base.
I bought too many peanut butter cups and now it’s midnight and I’m trying not to go on a binge. You’ve been warned.
I was partly inspired by Ben & Jerry’s Late Night Snack flavor and other snack-filled ice creams. Who doesn’t want to eat sweet and salty together?

There are two ways to assemble these snacksicles. Option one: make the vanilla graham base, mix in the crushed snacks, then fill the molds so the pops turn out swirled and integrated.
Option two: layer the ice cream base with crushed snacks in the molds to create popsicles with distinct surprise bites and chunky pockets of treats.
Also — we filmed a short video of the process. Eddie and I recorded it together; it was a fun attempt and we hope to make more casual videos of summer memories as we go.

Late Night Snacksicles

Ingredients
- 1 (15-ounce) can full-fat coconut milk
- 2/3 cup sweetened condensed milk
- 2/3 cup half and half
- 1 tablespoon vanilla bean paste
- 1/4 cup graham cracker crumbs
- 1 big handful Ritz crackers, crumbled
- 1 big handful pretzels
- 4 or 5 peanut butter cups, chopped
- 2/3 cup mini M&M’s
Instructions

In a large bowl, whisk together the coconut milk, sweetened condensed milk, half and half and vanilla bean paste. Stir in the graham cracker crumbs until combined.

Fill popsicle molds about one-quarter full, then add some crumbled crackers, pretzels, chopped peanut butter cups and mini M&M’s. Repeat layering until the molds are full, making sure there is liquid in each mold to hold the snacks in place.

Freeze the pops for one hour, then press a popsicle stick down into each one. Freeze for 4 to 6 hours or overnight. To release the pops, set the mold in warm water for 30 to 60 seconds and gently remove the sticks.
