This might be one of my favorite things ever on the blog — a gloriously trashed-up, deeply flavorful nine-layer dip that punches you in the face (in the best way).

I’ve been waiting forever to share this. I first spotted a version on Serious Eats months ago and kept tweaking until it felt right.

The layers are the star here.

First: refried beans swirled with buffalo wing sauce. They stand on their own as a dip, and paired with crunchy chips they are pure comfort.

Next comes a creamy, cheesy layer made with cream cheese, ranch dressing and mozzarella. I’m not usually a ranch person, but this layer is addicting.

Then the buffalo chicken layer: shredded chicken mixed with wing sauce, white cheddar, cream cheese, scallions and a touch of blue cheese dressing. It bakes until hot, melty and bubbly — pure party food heaven.

Once the dip comes out of the oven, finish it with fresh, textural toppings:

Grilled or roasted corn for sweetness and bite (frozen roasted corn works in a pinch), crispy crumbled bacon, crumbled gorgonzola that melts slightly into the hot cheese, another drizzle of wing sauce for bright heat, thinly sliced green onions and a generous handful of chopped cilantro to lift and refresh.

Serve with plenty of tortilla chips, pita chips, crackers, or even celery and carrot sticks if you like a lighter scoop. Add cold lemonade, beer or margaritas and you’ve got the perfect spread for a crowd.

Ingredients

  • 1 (16-ounce) can refried beans (or homemade)
  • 2 tablespoons buffalo wing sauce
  • 1 (8-ounce) block cream cheese, softened
  • 1 cup freshly grated mozzarella cheese
  • 1/4 cup ranch dressing
  • 1 (8-ounce) block cream cheese, softened
  • 1 cup cooked, shredded chicken
  • 1 cup freshly grated white cheddar cheese
  • 2 green onions, thinly sliced
  • 2/3 cup buffalo wing sauce, plus extra for drizzling
  • 2/3 cup grilled or roasted corn
  • 1/3 cup crumbled gorgonzola cheese
  • 4 slices cooked bacon, crumbled
  • 1/3 cup wing sauce for drizzling
  • 2 more green onions, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • Tortilla chips, pita chips or crackers for serving

Instructions

  • Preheat the oven to 350°F. Spray a baking dish with nonstick spray; a 7-cup clear dish about 4 inches deep works well so the layers are visible.
  • Stir together the refried beans and 2 tablespoons wing sauce. Spread this as the first layer in the dish.
  • Mix together the first 8-ounce block of cream cheese, the mozzarella and 1/4 cup ranch dressing. Gently spread this over the bean layer.
  • Combine the second 8-ounce block of cream cheese with 3/4 cup cheddar, shredded chicken, 2/3 cup wing sauce, 1/4 cup blue cheese dressing and 2 sliced green onions. Spread this on top of the cream cheese layer and sprinkle with the remaining cheddar. Drizzle extra buffalo sauce over the top and bake 20–25 minutes until bubbly and golden.
  • When the dip comes out of the oven, top with corn, crumbled gorgonzola, bacon, additional wing sauce, the remaining green onions and chopped cilantro. Serve immediately with chips or crackers.
