Yes — I’m making Lucky Charms Rice Krispie treats!

I’ll admit I feel a little silly, but I couldn’t resist. With everything happening right now, a simple nostalgic treat felt right for Saint Patrick’s Day — something cheerful we can make at home.

This recipe is a throwback to one of my favorite childhood snacks. I photographed it before the holiday, and it brings back all the warm, retro feelings. Right now I’m keeping busy in a low-key, not-panicking way — cooking, baking, and sharing simple recipes to distract myself and hopefully give you a few minutes of comfort and sweetness.

How do you feel about the marshmallows in Lucky Charms? Some people absolutely loathe them — they say the texture is too crisp or styrofoam-like. My partner can’t stand them, which I find kind of funny. I, however, love the little crunchy marshmallows. I don’t usually eat a bowl of Lucky Charms with milk, but I do like snacking on the marshmallows here and there.

So here’s my idea: classic crisp-and-chewy Rice Krispie treats made with mini marshmallows, studded with Lucky Charms marshmallows, and finished with more marshmallows pressed on top. The modern marshmallows are so wild compared to what I remember as a kid — they’re almost outrageously shaped now — but that’s part of the charm.

If you want an embarrassingly easy, festive treat to make at home, this is it. A little nostalgia can go a long way these days.
If you prefer something a bit more involved, try a themed cupcake or cake — there are plenty of festive recipes to explore. For now, though, these Rice Krispie treats are fast, fun, and kid-approved.

This recipe is great to make ahead. Slice and package the squares for gifts or to have on hand. You can use a larger pan if you prefer thinner bars; I like a thick 9×9 square so each piece feels substantial.

Texture is everything to me, so I can’t help fussing over how crisp or chewy these turn out.

Ingredients
- 4 tablespoons unsalted butter
- 1 10- ounce bag of mini marshmallows
- 6 to 7 cups crisped rice cereal
- 2 cups Lucky Charms marshmallows (or as many as you can find)
Instructions

Line a 9×9-inch baking dish with parchment paper or spray it with nonstick spray. A 9×13-inch pan works too, but the bars will be thinner.

In a large pot over low heat, melt the butter. When it’s melted and beginning to brown slightly, add the mini marshmallows and stir until fully melted and creamy.

Turn off the heat and fold in the crisped rice cereal until evenly coated. Stir in 1 cup of the Lucky Charms marshmallows and fold gently. Press the mixture into the prepared dish—use a piece of parchment to press it smooth so it doesn’t stick. Press the remaining Lucky Charms marshmallows into the top. Let set for about an hour, then slice and serve.
