We love this Mediterranean take on the viral smash burger tacos. These turkey smash burger tacos feature a tangy yogurt-feta sauce, plenty of fresh dill, pickled onions and roasted red peppers. They’re full of flavor and come together quickly.

This is one of the best things I’ve made lately: fast, fancy-tasting and incredibly satisfying. The combination of bright Mediterranean flavors with the crisped turkey “smash” texture is hard to beat.

I don’t usually chase food trends, but this twist on the smash burger taco deserved a spot in our rotation. A smashed turkey patty pressed into a flour tortilla and seared in butter becomes the perfect base for Mediterranean toppings.

Essentially, you flatten seasoned turkey onto a tortilla, sear it until golden-crisp, flip it, add warm feta and then pile on fresh toppings: shredded lettuce, tomatoes, roasted red peppers and pickled onions. A creamy yogurt-feta sauce with lemon and dill finishes each taco.

The turkey is seasoned with garlic powder, dill and salt and pepper, so each bite is bright and savory. The tortilla helps press and flip the meat and becomes pleasantly golden and crisp when cooked with a little butter.

My family loved these. They’re not showy on the plate, but the flavors are outstanding — and the toppings are what make them feel special. You can easily customize the toppings: cucumbers, hummus, extra feta or whatever you prefer.

This is how they come together:
Prep the toppings and sauce first so everything is ready when the turkey is cooked. Chop lettuce, tomatoes and roasted red peppers, and make the yogurt-feta sauce. If you like pickled onions, have them on hand too.
Divide one pound of ground turkey into six equal portions. Season with kosher salt, pepper, garlic powder and dill. Press each portion into one side of a flour tortilla so the meat spreads nearly to the edges—this makes thin patties that cook quickly and flip easily with the tortilla.
Melt butter on a hot nonstick griddle or skillet and place the turkey-side-down so it sizzles. Press the tortilla with a spatula or another pan to really flatten and sear the meat. Cook until deeply browned, about 5–6 minutes, pressing a couple of times as it cooks.
Flip so the tortilla side is down and cook until the tortilla is golden and crisp, another 3–4 minutes. Sprinkle crumbled feta on the warm turkey so it softens (feta won’t fully melt but will warm through).
Top each cooked taco with shredded lettuce, chopped tomatoes, roasted red peppers and pickled onions. Drizzle generously with the yogurt-feta sauce, fold and serve while warm. These are comforting, satisfying and full of layered Mediterranean flavor.

Ingredients
- 1 pound ground turkey (94% lean recommended)
- 6 fajita-sized flour tortillas
- Kosher salt and pepper
- 2 teaspoons garlic powder
- 2 teaspoons dried dill (dill weed)
- 1 to 2 tablespoons butter
- ⅓ cup crumbled feta (or more)
- Pickled onions, for topping
- Shredded lettuce, for topping
- Chopped tomatoes, for topping
- Chopped roasted red peppers, for topping
Yogurt Feta Sauce
- ½ cup plain Greek yogurt
- Juice and zest of 1 lemon
- 1 tablespoon chopped fresh dill
- ¼ cup crumbled feta cheese
- Kosher salt and pepper, to taste
Instructions
- Heat a large nonstick griddle or skillet over medium heat. Any flat nonstick surface works; the size determines how many you can cook at once.
- Divide the ground turkey into six equal portions. Press each portion onto a flour tortilla so it spreads nearly to the edges. Season with kosher salt, pepper, garlic powder and dill.
- Melt 1 tablespoon butter on the hot surface. Place the turkey-side-down so it sizzles. Use a spatula or small pan to firmly press the tortilla and really smash the turkey into the pan. Cook 5–6 minutes until deeply browned, pressing a few times as it cooks.
- Flip so the tortilla is down. Add more butter if needed. Sprinkle about 2 tablespoons crumbled feta over the turkey and cook 3–4 more minutes until the tortilla is golden and crisp and the cheese is warmed.
- Remove from the skillet and top immediately with chopped tomatoes, roasted red peppers and shredded lettuce. Add pickled onions and a drizzle of the yogurt-feta sauce. Fold and serve warm.
Yogurt Feta Sauce
- Whisk the Greek yogurt, lemon juice and zest, chopped dill, crumbled feta and salt and pepper until combined. Store in the fridge for a day or two and stir before serving.
