You know I’m not a coffee lover, but I do adore coffee-flavored treats—especially mocha sweets. My husband? Not so much.

The morning I made these mini mocha chip pancakes, he wandered into the kitchen, glanced at the plate, assumed they were chocolate chip cookies, shoved four into his mouth and promptly spit them out into the trash. Clearly, a coffee fan he is not. I wanted to smack him upside the head.
Fortunately, I’d made a huge batch for myself and to freeze for the week. From a distance they do look like chocolate chip cookies, don’t they? They’re similar to chocolate chip cookies in the irresistible way you want to eat a dozen at once. They’re that good.
You can top them with the classic butter and maple syrup, but I took a creamier route: a dollop of whipped cream on each pancake and eaten like a cookie. I used my favorite whole wheat pancake recipe, which makes them a little heartier—whole wheat = more delicious pancakes in my book. You can also use your preferred pancake mix and simply stir in instant coffee and chocolate chips. Make them your own.

Ingredients
- 2 cups whole wheat pastry flour
- 2 teaspoons baking powder
- 1 tablespoon instant coffee add more or less to taste
- 1 teaspoon salt
- 2 eggs well beaten
- 2 cups milk
- 2 tablespoons canola oil
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 cup semi-sweet chocolate chips
Instructions

Stir together the dry ingredients. Add the eggs, milk, vanilla and oil, and stir until the dry ingredients are moistened.

Heat a griddle or skillet to medium. Using a tablespoon, drop batter onto the preheated surface. Sprinkle chocolate chips into each pancake round. Cook until bubbles form and edges begin to dry, then flip and cook until lightly browned.

Serve warm topped with whipped cream, butter and maple syrup, or your favorite garnish.

I also think you could take these in a pumpkin spice direction—add a spoonful of coffee powder and a touch of pumpkin spice to make pumpkin spice latte pancakes. Sounds tasty!
