While I’ve been all about mocktails this summer, I finally made a rainbow we can drink.

Yes — you can eat and drink the rainbow at the same time. These rainbow coconut water spritzers are essentially a non-alcoholic coconut water sangria: no wine, lots of colorful fruit, and a fizzy finish. They’re simple, summery, and perfect for anyone who loves bright, fresh flavors.

Coconut water is the base here, and I didn’t fully appreciate it until I discovered a high-quality brand. Pure coconut water is light, refreshing, and naturally hydrating — not the overly sweet or artificial flavor some expect. It’s been a lifesaver after hot workouts and on sweltering days, and now it’s a go-to in our fridge for the whole family.
After pregnancies and intense workouts, coconut water felt like a small miracle for quenching thirst and preventing heat-related headaches. Even picky drinkers can find it surprisingly palatable when it’s the real thing. My kids call it “coconut juice,” and it’s become part of our daily routine.

I generally prefer plain water, but during this pregnancy plain water has felt off. To make hydration more appealing, I’ve been making coconut water spritzers — they make water taste better while keeping things light and refreshing.

For a festive version, layer in rainbow fruit — raspberries, strawberries, cherries, peaches, pineapple, lime slices, blueberries and blackberries — for a colorful, seasonal presentation. I love an over-the-top, joyful look for summer drinks, and arranging the fruit by color makes these feel extra special.
Fun personal note: I’ve been oddly tempted to replace my kitchen chairs with rainbow ones to match this vibe. Practicality won out, but the rainbow aesthetic definitely lives in my pantry.

For the fizzy element I used flavored seltzer — vanilla Polar was my choice and it paired beautifully with the coconut water. Other great options are La Croix flavors like coconut or passionfruit. The seltzer you pick will subtly shift the final flavor, so feel free to customize with your favorite sparkling water.
The best part is that these mocktails are not only tasty but also feel a little healthier than a sweet juice or cocktail — a hydrating, fruit-forward beverage that’s easy to assemble for kids and adults alike.

Rainbow Coconut Water Spritzers
Ingredients
Handfuls of fresh:
- raspberries
- strawberries
- cherries
- peaches
- pineapple
- lime slices
- fresh mint
- blueberries
- blackberries
- 16 ounces coconut water (use a high-quality brand)
- 8 ounces flavored seltzer (vanilla, coconut, or passionfruit work well)
Instructions

Fill each glass with a little crushed ice. Add fresh fruit arranged in rainbow colors (follow ROY G BIV if you like) and add a touch more ice. Pour about 4 ounces of coconut water into each glass.
