Roasted Broccoli Toast with Red Pepper and Lemon Zest

Bet you never thought I’d suggest roasted broccoli on toast.

Broccoli toast is the best way to sneak in some veggies! Toasted sourdough with ricotta and roasted broccoli, topped with lemon and crushed red pepper.

It might have seemed unlikely back in 2012, but here we are: broccoli on toast, and I’m into it.

I don’t even know.

But I like it.

Putting vegetables on toast has become my favorite way to eat them. I’ve been topping toast for years, but this style—whipped cheese and roasted broccoli—works for breakfast, lunch, or a quick veggie-forward meal. It’s more appealing to me than a side salad, and the crunch of good bread makes all the difference.

Put them on top of seedy, crunchy, toasty bread and I’m sold.

This idea grew from my love of parmesan-roasted broccoli. I make that often and toss leftovers into salads, wraps, pasta, or onto toast. Right now, broccoli toast is my go-to obsession.

For the spread, choose something creamy and slightly cheesy. I usually use ricotta, but whipped cottage cheese is a good higher-protein alternative if you process it until smooth. Either option creates a silky base that pairs well with the roasted florets.

The bright citrus of lemon—both zest and a squeeze—elevates the toast. A sprinkle of crushed red pepper adds a pleasant bite that complements the roasted broccoli without overpowering it.

Ingredients

  • 2 cups broccoli florets
  • olive oil or avocado oil spray
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • pinch garlic powder
  • ½ whole lemonzest freshly grated and cut into wedges
  • 1 to 2 tablespoons olive oil
  • 2 to 4 slices sourdough bread, toasted
  • ½ to 2/3 cup ricotta cheese or whipped cottage cheese
  • ½ teaspoon crushed red pepper flakes

Instructions

  • Preheat the oven to 425°F. Line a baking sheet with foil and lightly spray with nonstick oil.
  • Arrange the broccoli on the sheet and mist with oil. Season with salt, pepper, and garlic powder.
  • Roast for 20 to 25 minutes, until the edges are golden and slightly crisp.
  • While the broccoli roasts, whisk the lemon zest with olive oil in a small bowl and toast the bread.
  • Place the ricotta in a food processor and blend until smooth and whipped.
  • Assemble the toast: spread whipped ricotta over the toasted bread, pile on the roasted broccoli, drizzle with the lemon-oil, and finish with crushed red pepper. Serve with lemon wedges to squeeze on top.
  • Serve immediately.
