Here’s how to make a perfect Aperol spritz.

I just love a spritz.
It’s bright and bubbly, totally photogenic, and endlessly refreshing. I craved these while I was pregnant — they’re one of those drinks that feel like summer in a glass.
On vacation last week I had what felt like the most perfect spritz, which made me want to share this version with you today.

I prefer a little more bubbly than Aperol. Many recipes use equal parts Aperol and Prosecco, but I usually add a touch more sparkling wine — in this case, a dry sparkling rosé. The extra effervescence makes it extra lively.
When I serve these to guests, the extra splash of bubbly is always a hit.

I adore Prosecco, but switching to a dry sparkling rosé changes the drink in a delightful way. Choose a rosé that isn’t too sweet. Combine the Aperol and sparkling rosé in the glass, top with a splash of soda, and finish with peach slices for a summery touch.
Honestly, I could have one of these every day.

Ways to dress it up
Swap the orange garnish for fresh peach slices in summer, or use both. I also love using frozen peach slices instead of regular ice. They chill the drink without diluting it and add a subtle peach flavor.
Frozen peaches act like flavored ice cubes — they keep your spritz cold, won’t water it down, and you can eat them as they thaw. Peach slices soak up the flavors and make a delicious bite later.

This is my go-to summer cocktail this year. While I enjoy tequila and soda for lighter choices, this rosé Aperol spritz is fun to make and ideal for weekend entertaining.

- Crushed ice
- Frozen peaches, used as ice cubes (optional)
- 3 ounces Aperol
- 4 ounces Sparkling dry rosé
- 1 ounce Club soda (plain or citrus)
- Fresh peach slices for garnish
