Margaritas have always been my favorite cocktail. For years I defaulted to strawberry when I wanted something other than classic lime and tequila. Then I made watermelon mint margaritas for Seriously Delish, and they’ve been my favorite ever since — so bright and refreshing.

When you order watermelon drinks out, they’re often made with melon liqueur and taste overly sweet or artificial, like watermelon candy. I prefer using fresh watermelon juice and turning some of it into a simple syrup. It’s excellent in cocktails, iced drinks, mojitos, and — yes — popsicles.

I expected these popsicles to be good, but I didn’t expect to love them this much. They’re seriously addictive — the most satisfying, thirst-quenching treat on a hot summer day.

I couldn’t just let them melt — must consume all.

Each pop has a thin lime slice tucked in for decoration and a touch of extra flavor. You can eat the lime slice if you like. Be cautious with the tequila amount: too much alcohol will prevent the pops from freezing solid. I like a splash of Grand Marnier for a hint of orange citrus, but you can substitute with triple sec or omit it if preferred.

The result is summer on a stick — salty, sweet, bright, and perfect for sipping or slurping.

Salted Watermelon Margarita Popsicles

Ingredients

  • 2 cups fresh watermelon juice
  • 1 cup sugar
  • 1/2 cup fresh lime juice
  • 1/3 cup silver tequila
  • 2 tablespoons Grand Marnier
  • 10 lime slices
  • pink himalayan sea salt

Instructions

  • To make fresh watermelon juice, puree 3 to 4 cups of watermelon chunks in a blender or food processor. Strain through a fine-mesh sieve, pressing with a spoon to extract all the juice.
  • In a saucepan over medium heat, combine the sugar and 1 cup of watermelon juice. Bring to a simmer and whisk until the sugar dissolves. Simmer for 1 to 2 minutes, then remove from heat. Stir in the remaining watermelon juice, lime juice, tequila, and Grand Marnier.
  • Place a lime slice in each popsicle mold. Pour the watermelon mixture into the molds and freeze according to your popsicle maker’s directions, at least 4 to 6 hours. Serve with a sprinkle of pink Himalayan sea salt.
