Ingredients
- 2 tablespoons butter
- 2 large eggs, separated
- 1 1/4 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/2 teaspoon cinnamon
- 1 1/4 cups buttermilk
- 2 tablespoons melted butter
- 2 teaspoons vanilla extract
- 2 cups blackberries, plus more for serving
- Maple syrup, for serving
- Powdered sugar, for serving
- Whipped cream, for serving
Instructions
- Preheat the oven to 375°F. Add 2 tablespoons of butter to an oven-safe 10-inch cast iron or ovenproof skillet.
- Separate the eggs. Place the whites in a bowl and beat with a hand mixer until soft peaks form. Set aside.
- Place the buttered skillet in the oven to heat while you make the batter.
- In a large bowl whisk together the flour, sugar, baking powder, baking soda, salt and cinnamon. In a separate bowl whisk together the buttermilk, egg yolks, vanilla and melted butter. Add the wet ingredients to the dry and stir just until combined.
- Gently fold the beaten egg whites into the batter until incorporated — fold, don’t stir vigorously. Fold in the blackberries.
- Carefully remove the hot skillet from the oven; the butter should be melted and sizzling. Pour the batter into the skillet and bake for 25 to 30 minutes, or until the top is golden brown and a toothpick comes out clean.
- Allow to cool slightly, then slice and serve with maple syrup, a dusting of powdered sugar and softly whipped cream.
