I’ve been waiting all summer for this root beer float!

There’s something irresistible about s’mores — the balance of toasted marshmallow, melted chocolate and crunchy graham cracker creates a flavor and texture combo that instantly elevates treats. That same magic is what inspired this s’mores-inspired root beer float.

I’ve shared root beer float variations before because honestly, they don’t really need a strict recipe — but they’re worth celebrating. Over the years I’ve made everything from hot fudge root beer floats to root beer floatsicles and even boozy root beer cocktails. Each version is a little nostalgic, bringing back the best parts of childhood in one cold, fizzy sip.

Last year I experimented with stout milkshakes and s’mores, which were decadently good — rich and indulgent. This float keeps that same playful spirit, but pairs it with classic root beer to make something perfectly summery and a little bit nostalgic.
These floats are my ode to summer. I love how a simple combination of soda and ice cream can feel so festive, especially when you add a few finishing touches: a chocolate-fudge rim, a sprinkle of graham cracker crumbs and a charred marshmallow on top.

I’m a little torn as summer winds down: there are still warm-weather drinks I want to make, but apple season is coming and that’s short-lived. For now, this s’mores root beer float is my farewell to summer cocktails and mocktails — a fun, easy treat to enjoy while the days are still warm.
What makes this version extra playful is using both chocolate and vanilla ice cream. The contrast — like a black-and-white shake — makes the float feel special even though it’s wonderfully simple. If you like extra sweetness, a smear of marshmallow cream can be added, but I often prefer the toasted marshmallow itself for a smoky finish.
ALL the time I want a s’more though.


Smoky S’mores Root Beer Floats

Ingredients
- 1/3 cup milk chocolate chips melted
- 1 cup chocolate ice cream
- 1 cup vanilla ice cream
- 2 bottles root beer
- pinch of smoked sea salt
- 2 tablespoons graham crackers
- 2 marshmallows charred or torched
Instructions

Melt the milk chocolate chips in a bowl in 30-second microwave intervals, stirring between bursts until smooth. Drizzle or spread the melted chocolate around the rim of each glass for a fudgy edge.

Scoop chocolate and vanilla ice cream into each glass, then add a pinch of smoked sea salt. Pour root beer over the ice cream just before serving so it fizzes up. Top with crushed graham crackers and a charred or toasted marshmallow.

To toast marshmallows: char them over a gas flame, under a broiler (watch closely), over an open fire, or melt briefly in the microwave if you don’t have another option.
