No — we can never have enough. It’s the heart of summer and this is exactly what we need.

I absolutely love a Pimm’s Cup. It’s bright, citrusy and endlessly refreshing — my favorite poolside drink. We’ve been making them for years, and here I swap the usual seltzer or soda for sparkling rosé.

Hear me out: sparkling rosé is the key. The bubbles are essential — they keep the drink lively the way seltzer would. Imagine rosé mixed with cucumber, lemon and strawberries: light, fresh and perfectly summery.

For a true Pimm’s Cup, cucumber and lemon are non-negotiable — they make the drink unmistakably Pimm’s. If you skip them you’re just mixing Pimm’s into a cocktail. If you love strawberries more, try the strawberry-forward version I made a few years back; it’s incredible too.

Fun fact: I usually avoid carbonated drinks, but if there’s alcohol involved I want the bubbles. Go figure.

This cocktail is ideal for summer because it’s easy to make a single serving — you barely need to measure and it still turns out great. It’s just as simple to scale up and make a pitcher for a party. I’ll happily be invited.

Ingredients
- 1 handful of fresh mint
- 4 cucumber slices or ribbons made with a vegetable peeler
- 4 strawberries sliced
- 2 lemon slices
- 2 lime slices
- 4 ounces Pimm’s No. 1
- 1 lemon wedge (to squeeze)
- 1 lime wedge (to squeeze)
- 4 to 6 ounces sparkling rosé wine
Instructions

Fill a glass with ice, sliced strawberries, cucumber ribbons, fresh mint, lemon and lime slices. Reserve a small garnish of mint or a strawberry if desired. Layer ingredients for an attractive presentation: vegetables first, then ice, then fruit and citrus, then more ice.

Pour in the Pimm’s and squeeze the lemon and lime wedges into the glass. Use a spoon or cocktail stirrer to mix and gently bruise the mint to release aroma. Top with sparkling rosé and give a gentle stir. Garnish and serve immediately.
