Spiced Quinoa and Apple Pie Parfait Recipe

When I spotted Honeycrisp apples at the store yesterday, I was so excited I could have burst.

My plan was simple: caramelize them.

Well, that…and maybe eat a few slices with a mountain of bacon. Don’t ask.

This parfait was new to me. A few weeks ago Brittany made a quinoa parfait that looked so tempting I couldn’t stop thinking about it.

Greek yogurt and quinoa are both familiar ingredients, but combining them in a sweet parfait was a revelation. The texture is fantastic — creamy yogurt with chewy quinoa and soft, caramelized apples. I wasn’t sure how quinoa would work in a sweet dish, but I’m glad I tried it.

On the subject of new things, Mr. How Sweet finally caved and got a smartphone after swearing he never would. It’s amusing watching him figure it out — I like to call him “Gramps.”

I didn’t make the parfait for him, although it might have softened the blow of learning new technology.

I loved the texture of this parfait and the nutrition it delivers: protein from Greek yogurt, whole grain quinoa, and sweet, juicy fruit. It’s a satisfying breakfast or snack that tastes indulgent without being over the top.

The more my everyday food tastes like dessert, the happier I am.

Spiced Quinoa Apple Pie Parfait

Makes about 2 servings

Ingredients:

1 cup Greek yogurt

1 apple, chopped

1/4 cup dry quinoa

1/2 tablespoon cinnamon, divided

1/2 teaspoon nutmeg, divided

1/2 teaspoon salt, divided

1 tablespoon brown sugar

Optional: honey for drizzling

Instructions:

Preheat the oven to 375°F (190°C).

Toss the chopped apple with the brown sugar, 1/4 tablespoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon salt in an oven-safe dish. Roast the apples until soft and caramelized, about 15–20 minutes, stirring once if needed.

Rinse the quinoa, then combine the dry quinoa with the remaining 1/4 tablespoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon salt. Cook the quinoa according to the package directions (typically simmering in water until fluffy), then let it cool slightly.

When the apples and quinoa have cooled enough to handle (they can still be warm but not scalding), layer them in a glass or bowl with Greek yogurt. For extra flavor, stir a little cinnamon and honey into the yogurt before layering. Finish with a drizzle of honey if desired.
