Sticky Sheet Pan Chicken with Pineapple Salsa

This sticky chicken recipe is roasted on a sheet pan until glossy and caramelized, then finished with a bright pineapple salsa.

Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 pound chicken drumsticks
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons apple cider vinegar

pineapple salsa

  • 1 ½ cups pineapple chunks
  • 1 shallot, diced
  • ¼ cup chopped cilantro
  • 1 lime, juiced
  • pinch salt and pepper

Instructions

  • Preheat the oven to 425°F. Line a sheet pan with foil and spray it with nonstick spray.
  • Arrange the chicken thighs and drumsticks on the sheet pan and season both sides with salt, pepper and garlic powder.
  • In a bowl, whisk together the honey, soy sauce, brown sugar and apple cider vinegar. Brush a thin layer of the mixture onto the chicken; reserve the remaining sauce.
  • Roast the chicken for 20 minutes. Brush on more sauce, then roast 10 more minutes. Brush or spoon on any remaining sauce and roast 15 minutes more, or until the internal temperature reaches 165°F.
  • Remove from the oven and serve immediately with the pineapple salsa.

  • Combine the pineapple, shallot, cilantro, lime juice and a pinch of salt and pepper in a bowl. Stir to combine. You can make the salsa ahead and chill for the flavors to meld; it keeps well for 1–2 days in the refrigerator.
