Hello Friday! Here’s what the weekend looks like!
EATING
Some favorites for the weekend: a bright strawberry avocado salsa and a refreshing cucumber melon salad. I’m also making the best-ever baked beans—true crowd-pleasers—and pulling together recipes from my complete Fourth of July recipe guide for easy entertaining.
DRINKING
For something cooling and a little spicy, try a spicy grapefruit tequila soda. It’s simple, vibrant, and perfect for warm afternoons.
BAKING
On the baking front I’m leaning into berries: a triple berry trifle with raspberry sauce and a triple berry coffee cake. Both are great for sharing and keep well for a few days.
MAKING
I’m prepping dill pickle chicken salad as a make-ahead lunch—flavorful, easy to portion, and ideal for busy summer days.
SNACKING
For snacking, chimichurri and pistachio grilled feta is on rotation. Serve with crackers or crusty bread and let guests help themselves.
GRILLING
For the grill: grilled lemon shrimp paired with pesto couscous. Light, bright, and quick to cook, it’s a go-to for casual outdoor meals.
CRAVING
I’m craving a pimento cheese BLT—rich, tangy, and absolutely at the top of my list this weekend.
LISTENING
Listening to Ina, Nancy, and Diane host a dinner party—perfect background for cooking or relaxing with friends.
READING
I’m enjoying Sounds Like Love right now and have been moving through books from my summer reading list. It’s a great season for lighter, immersive reads.
WEARING
Outfit-wise I’m loving a pleated maxi dress for easy, polished summer style. I’m also using a straw circle tote and a playful starfish clutch for beach days and casual outings.
SHOPPING
Some practical finds I’ve been using: a compact folding jewelry tray that’s perfect for travel, a volume spray for hair, and a small umbrella designed to protect your phone—handy and oddly essential.
LOVING
I’ve been living in a casual sleeveless dress from Rhone to handle the heat, and their half zip has been a go-to for cooler evenings or air-conditioned spaces.
SHARING
I’m sharing my kids’ favorite neon swim gear—bright, easy to spot at the pool or beach—and rounding up my Fourth of July entertaining picks for anyone planning celebrations this summer.
CELEBRATING
Celebrating two months of Easy Everyday being out in the world! If you haven’t picked up a copy yet, it’s a great kitchen companion, and we have a book club community that cooks through the recipes together.
