Summer Fridays Volume 1: Sunlit Tracks for Warm Evenings

summer fridays

It’s time for the return of summer Fridays — our weekly virtual coffee date where I share what I’m eating, drinking, making, watching, and loving this season. These posts have become an annual ritual (this is year eight!) and are meant to inspire your weekend plans and add a little summertime fun to your Fridays.

EATING

I’m loving grilled jalapeño peach chicken, the burst tomato burrata pasta, and the best blueberry cucumber salad. Each of these feels light, bright, and perfect for warm-weather meals.

DRINKING

For refreshing sips, I’m reaching for cucumber Prosecco spritzers and my iced lavender lattes. Both are simple to make and feel delightfully summery.

MAKING

On the quick-and-easy front: my 10-minute grilled bruschetta and a hot chicken salad that’s fantastic served with chips or endive. Great for casual gatherings or an easy weeknight dinner.

BAKING

Sweet baking lately includes pound cake with strawberry icing and lavender lemon bars — bright, floral desserts that pair perfectly with iced coffee or afternoon tea.

GRILLING

Grilled romaine salads are a current favorite — seriously the best salad ever — alongside grilled portobello burgers and grilled steakhouse pizza for nights when the grill is firing.

CRAVING

I’ve been daydreaming about pulled pork with cherry chipotle BBQ sauce. It’s rich, tangy, and absolutely dreamy for summer sandwiches.

SNACKING

Snacking has been all about grilled shishito peppers with lemon, a hot lobster roll dip, and caramelized onion dip. These are perfect for casual get-togethers or lazy afternoons on the porch.

READING

I just started Mansion Beach and am enjoying it so far. If you’re building a summer reading list, my giant summer reading list is available and packed with great picks.

LISTENING

There’s a new summer Fridays kickoff playlist for the year — upbeat and easy to stream while you cook, garden, or relax.

WEARING

Annual reminder: you need a pair of summer cooking shoes. I recommend the oofos — they may not be stylish, but they’re incredibly comfortable and supportive. I wear the flip-flop version too. Also on rotation is a flattering, comfortable dress that’s on major sale and can be dressed up or down.

SHOPPING

I’ve been eyeing Zara’s beaded and rhinestone-fringe bags — such fun statement pieces. I’m also tempted by the rashguard version of my favorite La Blanca suit for extra sun protection.

LOVING

I’m thrilled to see so many of you cooking from Easy Everyday. If you don’t have a copy yet, this is your sign to pick one up — and consider joining our cookbook club while you’re at it.

BUYING

I’m currently obsessed with a giant carryall beach bag that fits everything, and it feels more manageable than the Scout 4 Boys tote I’ve used for years.

SHARING

I rounded up the best of my summer recipes — the ones you really shouldn’t miss. I’m planning a bucket list to cook through them all this season.

CELEBRATING

We just had the last day of school here. The year flew by, though the final weeks felt long. I’m looking forward to a slower rhythm and more relaxed summer days.
