Here’s something that might surprise you: I didn’t love tater tots. They felt very much like school lunch to me — the same tots you’d get in the cafeteria — and even though I wasn’t picky about school food, the nostalgia wasn’t always comforting. I remember even getting in trouble once for passing a note at lunch. Why would anyone do that?

Then there’s Eddie. He’s obsessed with tots—specifically sweet potato tots. He gets into meal ruts where he eats the same thing for months until he drops it cold turkey. One long phase was sweet potato tots and eggs for breakfast. He’d actually bake them and top them with fried eggs, even at 5 a.m. before workouts. It struck everyone else as a little wild, but he loved it.

He eventually moved on from the tots-for-breakfast routine last summer, and only recently tried tots again at dinner for the first time in months. I was a little nervous to serve this tater tot skillet to him—he’s a bit of a tot purist—but with bacon and cheese involved, I knew it had a good chance.

This skillet is officially a new favorite. It works for breakfast or dinner and somehow pulls off the perfect mix of textures: crispy tots, gooey cheese, savory bacon and tender baked eggs. It’s comfort food with a little trashy brilliance—think French fries and breakfast had a delicious baby.

Tater Tot Breakfast Skillet

Ingredients

  • 6 slices bacon chopped
  • 1 sweet onion diced
  • 1 red bell pepper diced
  • 4 cloves garlic minced
  • 8 large eggs
  • ¾ cup whole milk
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 8 ounces freshly grated white cheddar cheese
  • 2 cups  frozen tater tots
  • 3 tablespoons snipped chives or scallions for topping

Instructions 

  • Preheat the oven to 350 degrees F.
  • Heat a large skillet over medium heat. Add the bacon and cook until just crispy and most of the fat is rendered. Stir in the onion, red pepper and garlic. Cook until the vegetables soften and the bacon is fully crispy. Remove from heat.
  • In a bowl, whisk together the eggs, milk, salt, pepper and cheese. Stir the tater tots into the egg mixture, then pour everything over the bacon and vegetables in the skillet.
  • Bake the skillet for 35 to 45 minutes, until the eggs are set and the top is golden. Scatter the chives or scallions over the top and serve immediately.
