Traditional Bruschetta Recipes for Holiday Appetizers

Who doesn’t love a slice of toasted French bread topped with olive oil, garlic, cheese and fresh tomatoes?

 

This version of bruschetta comes together in under 30 minutes and works for casual snacking or entertaining.

 

I roughly chop the tomatoes and mince the garlic so you get big bursts of flavor with every bite.

I prefer French bread for its texture; day-old bread is ideal because it toasts up nicely, but fresh bread will work too.

If you have leftover bread, try dipping it in olive oil with a sprinkle of spices and Parmesan—that’s a great bonus snack.

Slice the loaf into even 1-inch pieces so they toast uniformly.

 

Brush each slice lightly with olive oil to enhance browning and add flavor.

I combine the tomatoes and garlic, spoon a bit on each oiled slice, and finish with a sprinkle of mozzarella before baking.

I bake the bruschetta until the bread is toasty and the cheese is melted, then add a little more fresh tomato and garlic on top for contrast.

Broiling can work for extra browning, but watch it closely—things can go from perfect to burned quickly.

 

The result is warm, crisp, and cheesy bread topped with cool, bright tomato and garlic for a pleasing contrast.

Ingredients

  • 1 loaf of French bread, cut into 1-inch slices
  • 1/2 cup olive oil
  • 3 Roma tomatoes, chopped
  • 4 garlic cloves, minced
  • 1 cup shredded mozzarella cheese
  • Parmesan cheese, for sprinkling
  • Salt and pepper, to taste

Instructions 

  • Preheat the oven to 400°F (200°C).
  • In a bowl, combine the chopped tomatoes and minced garlic. Season with salt and pepper to taste and set aside.
  • Arrange bread slices on a baking sheet and brush each slice with olive oil. Spoon a portion of the tomato and garlic mixture onto each slice, then sprinkle with shredded mozzarella.
  • Bake for 10–15 minutes, or until the bread is toasted and the cheese has melted. Keep an eye on them so they don’t burn.
  • Remove from the oven and top each slice with a little more of the tomato-garlic mix, a pinch of sea salt, and a sprinkle of Parmesan.
  • Serve warm.
