Trivia Friday: Fun Quiz Night Edition

Don’t miss this comforting cheese soup — make it this weekend!

Last night I made vegetarian enchiladas. I threw a bunch of ingredients together and they turned out amazing. I’ve made chicken enchiladas for years for my husband and brothers, but I was hesitant to try a vegetarian version since I’m not a big veggie fan. This one surprised me.

To make:

I sautéed:

  • potato chunks
  • chopped onion
  • red and green peppers
  • mushrooms
  • garlic

Once the vegetables were soft I stirred in 1/2 cup black beans, 1/2 cup refried beans and 1 cup enchilada red sauce. After the mixture thickened I added Monterey Jack cheese. I used La Tortilla Factory high-fiber tortillas in the green onion flavor — they’re incredible and I highly recommend them.

I filled the tortillas, covered the enchiladas with extra sauce and cheese, and baked them for about 20 minutes. They were very tasty and satisfying.
