I’m starting to feel like spring is right around the corner!

Even though we still have a few chilly weeks left, I couldn’t resist adding some bright, spring-inspired dishes to this week’s menu.

What To Eat This Week
Start the week with my parmesan pasta frittata — it’s hearty yet light when topped with fresh spring greens.
Next, try guacamole turkey burgers. We love them, and they’re just as good deconstructed if you prefer them that way for an easy weeknight dinner.
Midweek calls for skillet sausage and kale lasagna. It reheats beautifully, so the leftovers are just as satisfying as the first serving.
As the weather warms, buffalo cauliflower lettuce cups make a refreshing, crisp dinner choice later in the week.
On Friday, keep things simple and delicious with lemon butter shrimp and broccoli — embarrassingly easy, and classically good.
End the week with a marinated chickpea panzanella. It’s been a while since I made this, and we always love it when I do.
For lunches, I’m planning on my smashed chickpea salad on toast. Breakfasts this week will be my classic peanut butter overnight oats.
