To start the week: weeknight skillet chicken paired with Irish cheddar potato pancakes. The skillet chicken is quick, flavorful, and perfect for a weeknight, while the potato pancakes bring cheesy, golden comfort—great for St. Patrick’s Day or any night you want something a little special.

Taco Tuesday! I love making a crunchy kale taco salad for an easy, satisfying midweek meal. It’s crunchy, fresh, and full of bold taco flavors without the fuss.

Midweek, try a sheet pan cashew chicken for an effortless, crowd-pleasing dinner. It roasts up beautifully and requires minimal cleanup—ideal when you want something tasty with little hands-on time.

Another simple option is weeknight pasta with artichoke sauce. This dish is easy to pull together, delightfully creamy without being heavy, and a great way to change up pasta night.

For Saint Patrick’s Day, I’m making an Irish beef stew with herb dumplings. It’s rich, comforting, and perfect for a cozy celebration—hearty meat, braised vegetables, and fluffy dumplings to soak up the sauce.

On Friday, I’m planning pistachio-crusted salmon with shaved asparagus. It’s bright, elegant, and quick to prepare—one of my favorite lighter dinners for the end of the week.

For lunches this week I’ll batch-make a lemon almond chicken salad. It’s tangy, crunchy, and travels well—great for work lunches or quick meals at home.

And breakfasts will include another batch of salted maple granola—crispy, slightly sweet, and perfect with yogurt or milk to start the day on a good note.
