Below are some of my favorite, easy-to-make dishes to carry you through a busy week in the kitchen.

What To Eat This Week

Monday: Soup night. Try a lemon-ginger couscous chicken soup for something nourishing and comforting. It’s warm, bright and easy to make on a hectic evening.

Tuesday: Keep it simple with classic ground beef tacos. They’re quick to prepare, crowd-pleasing, and perfect for Taco Tuesday.

Wednesday: Treat yourself to a caramelized onion, Brussels sprout and pistachio pizza. The combination of sweet onions, crisp Brussels and crunchy pistachios is seriously crave-worthy.

Thursday: If you’re not in the mood for a full holiday spread, make a rosé coq au vin instead. It’s rich, flavorful, and feels special without a ton of fuss.

Friday: If you have leftover turkey (or a rotisserie chicken), use it in a comforting roasted turkey ramen. It’s a great way to turn leftovers into a cozy, satisfying meal.

Saturday: For something lighter but still filling, try a honeycrisp kale quinoa salad. It balances crunch, sweetness and hearty quinoa for a well-rounded plate.

Sunday lunch: Chicken salad stuffed avocados are an easy, satisfying lunch that feels fresh and a little indulgent.

And for breakfast or a snack: Cranberry sauce overnight oats are seasonal, sweet-tart, and perfect when you want something make-ahead and delicious.
