This week features some of my favorite comfort foods and delicious dinners that are easy to make and full of flavor.

We’ve got soup, fajitas, and puff pastry pizza — all the good stuff!

What To Eat This Week
Start the week with a comforting tray dinner: sheet pan gnocchi and vegetables. You can keep it vegetarian or add sausage or another protein for more substance. The soft gnocchi and roasted vegetables make an easy, satisfying meal.
Next up, enjoy a bowl of chicken Parmesan soup. This hearty, cozy soup is a family favorite—creamy, flavorful, and topped with cheesy croutons that everyone will love.
For midweek, try a Brussels fontina puff pastry tart. It’s a simple, elegant dish that feels like a shortcut to pizza—crispy puff pastry, melted cheese, and caramelized Brussels sprouts come together into something special.
Then, make maple BBQ salmon with brown butter couscous for a lighter but still filling dinner. The sweet-savory glaze pairs perfectly with nutty, buttery couscous for a balanced meal.
Sheet pan shrimp fajitas are a fast, flavor-packed option. They assemble quickly and are excellent wrapped in tortillas or served over a fresh salad for an easy weeknight dinner.
Later in the week, serve smoky sloppy joes with green chiles and a bright yogurt slaw. I make these regularly—using ground turkey or a mix as suggested—and they’re reliably delicious. Leftovers reheat beautifully and make great lunches.
For breakfast, try lemon curd chia pudding for a bright, make-ahead start to the day. For lunches, assemble make-ahead Baja grain bowls to keep you fueled through busy afternoons—fresh, adaptable, and perfect for meal prep.
