I love this week’s menu — it feels like spring in every bite!

This week features a bright salad, a cozy breakfast-for-dinner, and easy sheet-pan fajitas.

What To Eat This Week
Start the week with the asparagus croque madame — a perfect spring dish that balances fresh asparagus with rich, melty comfort.
Then move on to lime chicken sheet pan fajitas. They’re incredibly simple to make, pack a lot of flavor, and can be prepped ahead for busy nights.
Celebrate Saint Patrick’s Day with an Irish ale potato cheddar soup. It’s a warm, comforting bowl that feels special without being fussy.
Midweek, try broccoli cheddar risotto. Creamy, cheesy, and packed with tender broccoli, it’s quickly become a new favorite in our house.
For the end of the week, make pretzel-crusted chicken salad. The crunchy coating, sharp cheddar and a bright dressing make it a satisfying, flavorful meal.
Wrap up the week with a sheet pan breakfast — sweet potato hash, eggs, and bacon all roasted together for an easy, delicious morning or breakfast-for-dinner option.
For lunches this week, I’m making green goddess tuna melt tartines. For breakfasts, I’ll be enjoying a big batch of cashew butter granola to keep mornings simple and tasty.
