If you have leftover kale, transform it into crispy kale grilled cheese with fried eggs. It’s a fun, nostalgic twist on a classic grilled cheese and makes a hearty meal.

Cheeseburger tostadas are an indulgent, crowd-pleasing choice that come together faster than you might think—great for a casual dinner everyone will enjoy.

Finish the week with baked chicken Parmesan meatballs. They’re versatile—serve them over pasta or pile them into sandwiches. Pair with a simple house salad to round out the meal.

For lunches, I’m leaning on nicoise-style bagel sandwiches—easy to assemble and portable. For breakfasts, shaved egg avocado toast is my go-to: creamy, savory, and quick to make.
