It’s an exciting day here — today marks one year since Everyday Dinners launched!

We’ve had an incredible year with the book, including a vibrant cookbook club community that’s worked through the entire book since last May.

This zucchini puff pastry recipe comes from Everyday Dinners and is one of the most popular among readers. If you haven’t noticed, I have a serious love affair with puff pastry — there are puff pastry pizzas for every season in the book, plus a few extras.
This one is the summer version: thinly sliced zucchini, lemon, goat cheese and garlic for a light, bright flavor.

Puff pastry pizzas are incredibly versatile. They make an easy weeknight meal served with a simple salad, elegant appetizer slices for a party, or a quick solo lunch. You can even host a puff pastry pizza party with a variety of toppings — the options are endless.

If you’re new to Everyday Dinners, here’s what you’ll find: 100 approachable dinner recipes designed to come together in 30 minutes or less, along with a heavy focus on meal prep. The book includes my everyday essentials — dressings, sauces and quick recipes I keep on hand — plus a large meatless section, and favorites for chicken, pork, beef and seafood. There’s also a side dish section with go-to accompaniments that elevate any meal.

The cornerstone of the book is my 10 Minute Meal Prep method — the strategy that keeps weeknight dinners manageable and tasty. The book shares the full method plus prep instructions for every single recipe.

This zucchini puff pastry is a perfect example of the book’s fresh, seasonal recipes. The lemon and goat cheese keep it light while the puff pastry provides a flaky, satisfying base — ideal for spring and summer.

Ingredients
- 1 zucchini, very thinly sliced
- 1 sheet thawed puff pastry
- ½ cup freshly grated mozzarella cheese
- ½ teaspoon garlic powder
- kosher salt and pepper
- ¼ teaspoon crushed red pepper
- 4 ounces goat cheese
- 1 lemon, zest freshly grated
- fresh herbs for serving
Instructions
-
Preheat the oven to 425°F and line a baking sheet with parchment paper.
-
Place the zucchini slices on a cutting board, sprinkle with salt and let sit for 5 minutes. Pat dry with a paper towel to remove excess moisture.
-
Lay the puff pastry sheet on the prepared parchment. Sprinkle the mozzarella over the pastry, leaving a 1-inch border. Arrange the zucchini slices on top, then season with a bit more salt, pepper and garlic powder. Crumble the goat cheese over the zucchini, sprinkle with crushed red pepper, and finish with the lemon zest.
-
Bake for 20 to 25 minutes, until the pastry is golden and crisp. Scatter fresh herbs over the top before serving.
