Fresh Strawberry Mint Lemonade

Ingredients
- 2/3 cup granulated sugar
- 2/3 cup water
- 1 1/2 cups fresh lemon juice
- 1 1/2 cups sliced strawberries
- 1/3 cup fresh mint leaves

In a small saucepan, combine the sugar and water and heat over medium to make a simple syrup. Whisk until the sugar dissolves, bring the mixture briefly to a boil, then remove from heat and chill for about 10 minutes.

Place strawberries and mint in a blender and puree until smooth. Add the lemon juice and cooled simple syrup, then blend again until combined. You can leave the puree thick, strain half to lighten it, or strain all of it to remove pulp—choose the texture you prefer. Chill the mixture in a pitcher for about 20 minutes, then serve over ice.
