Ingredients

  • 4 medium sweet potatoes
  • 2 sweet onions, thinly sliced
  • 1 1/2 tablespoons unsalted butter
  • 1 teaspoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon freshly cracked pepper
  • cup freshly grated Gruyère cheese
  • 1 teaspoon dried thyme
  • 1 garlic clove, minced
  • ½ cup seasoned panko bread crumbs
  • cup Greek yogurt or sour cream, to dollop
  • 3 tablespoons chopped fresh chives

Instructions

  • Preheat the oven to 400°F. Place the potatoes on a baking sheet and pierce them several times with a fork. Roast for 50–60 minutes, or until tender when pierced.
  • While the potatoes roast, caramelize the onions. In a large pot over the lowest heat, add 1 tablespoon butter and the olive oil. Add the sliced onions with a pinch of salt. Cook, stirring occasionally, until deeply caramelized, about 50–60 minutes. Keep the heat very low so they don’t burn. If you’re short on time, a few teaspoons of brown sugar or honey will speed the process.
  • Slice each potato down the center and sprinkle with Gruyère and a little dried thyme. Return to the oven for 5–10 minutes to melt the cheese.
  • Meanwhile, heat a small skillet over medium, add the remaining tablespoon of butter and the minced garlic. Cook 30 seconds, then add the remaining thyme and panko. Toast, stirring, until browned and crisp, about 5–6 minutes.
  • Top each potato with caramelized onions, sprinkle with the toasted breadcrumbs, add a dollop of Greek yogurt or sour cream, and finish with chopped chives. Serve immediately.
