Yes, the microwave works in a pinch — I’ve made microwaved s’mores in desperate moments and I’m not ashamed — but sheet pan s’mores are the secret for feeding a crowd quickly and getting great results.

The first time I made these I had a total brain meltdown. I’m terrible at math and apparently not paying attention: I prepped a full sheet pan with bottoms and thought I was composing pairs on the pan, so instead of 12 s’mores we ended up with 25. It was a hilarious mistake — plenty to go around.

Ingredients
- 24 graham crackers
- 12 squares of chocolate (Lindt or similar; peanut butter cups work too)
- 12 marshmallows (large)
Instructions
- Place your oven rack on the lowest level. This gives the marshmallows and chocolate a moment to soften and toast without burning when using the broiler.
- Preheat the broiler on high. Arrange 12 graham crackers (bottoms) on a sheet pan. Top each with a piece of chocolate or a peanut butter cup, then place a marshmallow on top of each.
- Slide the sheet pan into the oven and broil for 1 to 3 minutes, watching closely. Timing depends on your broiler — you want marshmallows puffed and golden on top.
- Remove the pan from the oven, place the remaining graham crackers on top to form sandwiches, and serve immediately.
