Hi there — happy weekend!
As February races by, I can’t stop planning summer trips and filling my online cart with spring clothes. It’s been so much fun. This weekend I’m buried in book work, but I’m planning a little escape tonight. What are your plans?
P.S. If you make one thing this weekend, try pink grapefruit margaritas — they’re wonderful.
Here are a few things I’m loving this week:
- Completely obsessed with a puffed quinoa crumble — light, crunchy, and addictive.
- S’mores overnight oats — yes, please. A nostalgic breakfast that feels like dessert.
- Creamy garlic butter Tuscan salmon — rich, garlicky, and comforting.
- A citrus ricotta tart with almond-corn flour crust — bright, elegant, and gluten-free-friendly.
- Thinking about sheet pan Thai salmon — quick, flavorful, and weeknight-friendly.
- A dirty chai affogato — espresso, spice, and ice cream make a brilliant pairing.
- Taco-stuffed shells — why haven’t I tried these before? They look amazing.
- Buffalo chicken chili — on my must-try list for bold, cozy flavors.
- Chocolate strawberry cups — such a fun and pretty treat.
- Thai chicken and cucumber salad — fresh, tangy, and perfect for warmer days.
- A chocolate sheet cake topped with milk chocolate frosting — classic and satisfying.
- A mezcal paloma — smoky, tart, and exactly what I want this weekend.
Small pleasures, big flavors, and lots of inspiration — that’s what’s been on my radar. Hope you discover something delicious to try this weekend too. Cheers!
