Mojito Melon Salsa Recipe — Refreshing Mint-Lime Fruit Salsa

Is it officially summer yet?

Maybe not by the calendar, but it sure feels like it — temperatures jumped from the 40s to the 90s in just a few days, and I’m already contending with sticky legs clinging to every chair until October. Welcome to summer.

So let’s celebrate.

Who else loves mojitos?

I wish I had more hands — or maybe I did this weekend, because I drank enough mojitos to pretend I had 34. Mint and rum are my weakness. My husband drank a few too many and skipped a nose strip, which led to a night of snoring and an early banishment to the couch. Some nights we drink mojitos, some nights we eat them — balance, right?

The next day I made up for it by piling juicy melon chunks, fresh mint and bright lime on salty pita chips. It’s a mojito in salsa form: bright, refreshing and perfect for summer snacking.

Mojito Melon Salsa

Yield: 2 to 3 cups of salsa

Ingredients

  • 1 cup chopped watermelon
  • 1 cup chopped cantaloupe
  • 1 cup chopped honeydew
  • 1/2 large cucumber, seeded and chopped
  • 1/4 red onion, chopped
  • 1/2 avocado, chopped
  • 10-12 mint leaves, chopped
  • 2 tablespoons chopped cilantro
  • 2 limes, juiced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  • Combine all ingredients in a bowl, then add lime juice, salt and pepper. Toss gently to combine so the avocado stays intact but everything is evenly coated. Serve with pita chips, tortilla chips or on top of grilled tacos for a bright, summery finish.
