Now on to some cozy comfort food. It’s snowing this morning in Pittsburgh, and the one thing on my mind is a big, warm plate of egg noodles and gravy.

To me this is the ultimate comfort food. Growing up, my favorite meal was pot roast with mashed potatoes, egg noodles and plenty of gravy. It still feels like home when my mom makes it — food somehow always tastes better when someone else cooks it for you.

I like to use wide egg noodles for this dish.

I usually make this with a beef or pork roast, though chicken or turkey gravy work well too. I especially love pulled pork served with these noodles.

Add the noodles to the gravy about 10 minutes before dinner so they soak up flavor. I intentionally keep the gravy a bit thin at first so the noodles can absorb it fully.

Once the noodles are cooked through, you can thicken the gravy slightly if you prefer. The noodles become packed with savory, rich flavor.

You can serve the noodles in a dish with extra gravy on the side, but our favorite way is to pile them on top of creamy mashed potatoes.

Egg Noodles and Gravy

Serves 4

2 cups egg noodles
Gravy from pork, beef, chicken, turkey, or your preferred roast

Instructions: Add the noodles to the hot gravy about 10 minutes before serving. Let the noodles simmer in the gravy so they absorb flavor. If needed, thicken the gravy once the noodles are cooked. Serve the noodles over mashed potatoes for a comforting meal.
