Chocolate Peanut Butter Granola Bites Recipe — No-Bake Snack

Lately I’ve been hit with serious chocolate and peanut butter cravings. No, there’s not a “how sweet” bun in the oven, though I did dip a tortilla chip into chocolate frosting on Tuesday afternoon. Whatever that means.

Chocolate and peanut butter together are virtually foolproof. The pairing is sublime—perhaps the best combination out there. And granola? Granola is my particular weakness.

These treats are essentially tiny granola “muffins.” Because they’re mini, you can eat more of them—three pounds of granola instead of two, right? It’s all about balance.

They’re incredibly simple to make. I include my recipe below, but you can adapt any granola mix you like. The important part is that the mixture is sticky enough before baking and that you allow the bites to cool completely in the tin before removing them.

Once they’re baked, the possibilities are endless. Sprinkle them over oatmeal, stir into yogurt, top ice cream, snack on them plain, dip them in more peanut butter—or get creative with savory additions. Whatever you choose, they hold up well.

Chocolate Peanut Butter Granola Bites

Makes about 24 bites

Ingredients:

  • 2 cups dry rolled oats
  • 1/4 teaspoon salt
  • 1/4 cup wheat germ
  • 1/4 cup ground flaxseed
  • 1/3 cup chopped almonds
  • 1/2 cup chopped peanuts
  • 1/3 cup chocolate chips (chopped slightly if desired)
  • 1/2 cup peanut butter
  • 1/4 cup honey (approximately; add more if needed)

Instructions:

  1. Preheat the oven to 325°F (165°C).
  2. In a large bowl, combine the oats, flaxseed, wheat germ, salt, chopped almonds, chopped peanuts, and chocolate chips. Mix to distribute evenly.
  3. Add the peanut butter and use two spoons to begin coating the dry ingredients. If needed, use your hands to press and combine until the mixture becomes dough-like.
  4. Add honey slowly, mixing thoroughly. If the mixture doesn’t hold together, add honey a teaspoon at a time and knead with your hands until sticky enough to form bites.
  5. Spray a mini muffin tin with nonstick spray. Using a small scoop or spoon, press portions of the granola mixture into each cavity, packing gently so the pieces stick together.
  6. Bake for about 25 minutes, checking every 10 minutes to ensure the granola isn’t browning too quickly. Remove from the oven and allow to cool completely in the tin—this step is essential for the bites to set.
  7. When fully cooled, gently twist or use a spoon to release the granola bites from the tin.
