For a cozy dinner, tomato soup with grilled cheese sticks is unbeatable. The tomato soup is rich and comforting, and you can use your favorite cheese for the grilled sticks.

Cheesy chicken baked avocados are a warm, satisfying option later in the week. They’re gooey, flavorful, and simple to bake.

I’m bringing back my fall kale salad with Honeycrisp apples one more time this season — crisp, slightly sweet, and perfect alongside many mains.

A cashew shrimp and mango stir-fry makes for an easy, bright meal that reheats well for lunch the next day. The combination of sweet mango and savory cashews keeps it interesting.

Sausage, kale, and gnocchi cooked together in one skillet is a fast, family-friendly dinner. I like smoked turkey sausage, but use any precooked sausage you prefer.
