Chocolate Cherry Crispies Recipe — Chewy Chocolate Cherry Bars

Chocolate Cherry Crispies

Makes about 12 crispies

Ingredients:

  • 3 cups rice cereal (white or brown)
  • 1/4 cup dried cherries, chopped (or other dried fruit)
  • 1/2 cup dark chocolate chunks or chips, melted

Instructions:

  1. Combine the rice cereal and chopped dried cherries in a large bowl.
  2. Melt the dark chocolate until smooth. You can do this gently in the microwave in short bursts, stirring between each, or use a double boiler.
  3. Pour the melted chocolate over the cereal and cherries. Use a spatula to mix thoroughly so the cereal is evenly coated.
  4. Using an ice cream scooper or spoon, portion the mixture into scoops and place them on a baking sheet lined with parchment or a silicone mat.
  5. Refrigerate for at least 30 minutes, or until the chocolate has set.
