Apologies to anyone who truly dislikes pickles — this one isn’t for you. For the rest of you who live for pickle flavor, this cheater’s pickle pizza is pure bliss.

Pickles can be polarizing. My partner doesn’t like them at all, so this pizza is his worst nightmare — which I sometimes exploit by texting photos of it just to tease. But for me, pickles are a lifelong love: tart, briny, and addictive. I enjoy dill, bread-and-butter, and even spicy varieties.

This is my favorite take on pickle pizza. I make a simple faux-ranch spread using plain Greek yogurt or sour cream mixed with ranch seasoning. That becomes the “sauce” spread over the puff pastry. Sharp white cheddar pairs perfectly with pickles — there are few better flavor friends. For the pickles, dill pickle chips are ideal: bite-sized and perfectly shaped so every slice gets a few pieces.

I’m a big fan of puff pastry pizzas for quick weeknight dinners — the crust is flaky and delicate, so don’t overload it. Distribute the cheese and pickles evenly, leave a border for the crust, then bake. I prefer puff pastry sheets without perforations; they puff more beautifully.

This pizza takes about 20–25 minutes from start to finish. Right after it comes out of the oven I sprinkle fresh chives over the top and drizzle hot honey for that spicy-sweet contrast that complements the pickles perfectly. The result is bright, tangy, salty, and slightly sweet — a big hit with minimal ingredients.

This makes a great quick dinner or a fun appetizer for a party. It’s sharp, tart, sweet, and savory all at once, and comes together in minutes.

- 1 sheet puff pastry, thawed if frozen
- ½ cup sour cream (or plain Greek yogurt)
- 2 teaspoons ranch seasoning
- 1 cup freshly grated sharp cheddar cheese
- ¾ cup dill pickle chips, patted dry
- 1 egg + 1 teaspoon water, beaten (for egg wash)
- Fresh chives, for sprinkling
- Hot honey, for drizzling
Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- Lay the sheet of puff pastry on the parchment and prick it all over with a fork to prevent large bubbles.
- Mix the sour cream (or Greek yogurt) with the ranch seasoning and spread it over the puff pastry, leaving a 1-inch border. Sprinkle the grated cheddar evenly over the top and arrange the pickle chips. Brush the pastry edges with the egg wash.
- Bake for 20–25 minutes, until the puff pastry is golden and puffed.
- Remove from the oven, sprinkle with fresh chives, and drizzle hot honey over the pizza. Slice and serve.
