Bacon-Wrapped Green Bean Bundles: Crispy, Flavor-Packed Side Dish

Remember when I made those strawberry lemonade cupcakes? The ones I treated like dirt—undervalued, chewy, and not my favorite? These green bean bacon bundles were made in the same stretch of kitchen chaos.

Some days the kitchen is magical: breads rise, cupcakes fluff, chicken caramelizes. Other days things fall flat, garlic bread burns and broccoli gets relegated to the crisper drawer where dreams go to die.

On that particular day I was oddly productive. I baked, walked six miles (and developed terrible blisters), consoled myself with ice cream, watched Father of the Bride twice and, yes, ate bacon. Because bacon makes everything better.

A reader named Laura sent this recipe weeks ago—hi, Laura!—and suggested it might be right up my alley. She was right. Bacon plus butter plus green beans equals a very good idea.

I made a few small adjustments: fresh green beans, slightly less butter and a bit more broiling at the end so the bacon gets properly crisp. The result is somewhere between roasted green bean fries and a sweet-savory bacon bite—brown sugar and garlic glaze wrapped around bundles of beans and bacon.

They may look a little like tiny spiders on a plate, but taste-wise they’re irresistible. These are perfect as an appetizer, side or party snack—easy to pick up and full of flavor.

Green Bean Bacon Bundles

Ingredients

  • 1 pound fresh green beans
  • 10-12 slices thick-cut bacon
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat the oven to 400°F (205°C). Lightly spray a 9 x 13-inch baking dish with nonstick spray.
  • Wash and thoroughly dry the green beans. Season them with salt and pepper. Bundle about 5–8 green beans together depending on bean size and how many bundles you want. Wrap one slice of bacon around the center of each bundle to hold it together, and place the bundles seam-side down in the baking dish. Repeat with the remaining beans.
  • In a small saucepan over low heat, melt the butter with the brown sugar and minced garlic, whisking until combined. Brush the mixture over each green bean bundle. Cover the dish with foil and bake for 35 minutes. Remove the foil and bake an additional 10–15 minutes, or until the bacon is crisp. Serve warm.
