Smoky Bacon Popcorn with Burnt Sugar Glaze and Sea Salt

This popcorn is utterly addictive.

I’ve never considered myself a huge popcorn person, but lately it’s all I want. It probably started with those popcorn crunch brownies—wow. This is my second recipe that pairs with Pavan, and this time it complements the signature Mediterranean cocktail. Pavan is a grape-based liqueur, almost like a white wine liqueur that evokes the French Riviera; the cocktail here is simply vodka, Pavan and lemon juice. It’s uncomplicated and perfect—just the extra flavor I want in a vodka drink.

The popcorn itself is popped in bacon grease, seasoned with smoky spices, and finished with a burnt sugar glaze. The combination of salty, smoky and sweet is irresistible.

Ingredients

  • 6 slices thick-cut bacon
  • 1/3 cup corn kernels
  • 1/2 cup granulated sugar
  • 1/4 cup boiling water
  • 1/2 teaspoon flaked sea salt
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin

Instructions

  • Heat a large skillet over medium-low heat and fry the bacon until crispy. When the bacon is crisp and the fat has rendered, transfer it to paper towels to drain. Reserve about 2–3 tablespoons of the bacon fat in the skillet. Increase the heat to medium-low, add the corn kernels, and stir or shake the pan until popping begins. Cover once the kernels start popping and continue shaking the pan until most kernels have popped. Remove from heat and transfer the popcorn to a large bowl. Season with the flaked sea salt, cumin and smoked paprika. Crumble the bacon and toss into the popcorn.
  • To make the burnt sugar glaze, use a separate large skillet and heat the granulated sugar over medium heat, stirring constantly. Continue stirring for about 6–8 minutes until the sugar turns a deep golden amber. Carefully add the boiling water and whisk until the sugar dissolves; a few crystals may re-form, which is fine. Immediately strain the sugar syrup to remove any solids, then pour the hot glaze over the popcorn. Toss continuously for a minute or two until the glaze coats the popcorn and the bacon is evenly distributed. Serve right away.
