If you don’t agree, I’m not sure how we ended up in this vague, imaginary friendship. Maybe we bond over sneaking cookie dough from the tub, or binge-watching long TV marathons and pretending we can still have a child someday. Either way, you get me. Also — your hair looks great.

No-Bake Double Chocolate Peanut Butter Snack Bites

This recipe is a riff on an earlier favorite — the no-bake oatmeal peanut butter bites. I loved those so much I often made a double batch and kept them for quick pre-workout fuel or an afternoon pick-me-up. They were peanut-butter-forward with just a few chocolate chips. But then I wondered: why not flip the balance and make them mostly chocolate with a hint of peanut butter?

So I did.

I also tossed in chocolate-covered sunflower seeds because they’re irresistible. They’re tiny, colorful, and chocolaty — and I’ve definitely eaten an entire container in a single day before. They feel delightfully indulgent while somehow still being a seed, which makes them easy to justify. Needless to say, they add a fun crunch and sweet pop to these snack bites.

No-Bake Double Chocolate Peanut Butter Snack Bites

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/4 cup ground flaxseed
  • 1/4 cup sliced almonds, chopped
  • 2 tablespoons chia seeds
  • 1 1/2 tablespoons dark cocoa powder
  • a pinch cinnamon
  • a pinch of salt
  • 1/4 cup + 2 tablespoons creamy peanut butter, melted and slightly cooled
  • 1/4 cup + 1 tablespoon honey
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips
  • 2 tablespoons chocolate covered sunflower seeds
  • ground peanuts or almonds mixed with a few pinches of cocoa powder, to roll the balls in

Instructions

  • Combine the oats, chopped almonds, ground flaxseed, cocoa powder, chia seeds, a pinch of cinnamon and a pinch of salt in a large bowl. Stir until evenly mixed.
  • Melt the peanut butter until smooth and let it cool slightly (about 30 seconds in the microwave, then stir). Mix in the honey and vanilla until combined. Pour the peanut butter mixture over the dry ingredients and stir. When the mixture begins to hold together, use your hands to bring it into a dough. Fold in the mini chocolate chips and chocolate-covered sunflower seeds.
  • Form the mixture into golf-ball-sized (or slightly smaller) balls. Roll each ball in the ground peanuts or almonds mixed with a little cocoa powder. These bites are fine at room temperature, but they keep best chilled.
