It’s been a while since I made agua fresca on the regular. When I was developing recipes for my cookbook, I tested versions constantly to find the perfect balance. I’ve shared watermelon and mango agua fresca before, and while watermelon used to be my top choice, this one might have taken the crown.

This agua fresca is incredibly refreshing. It’s light, not overly sweet, and if you love fruit it really hits the spot. I find it more thirst-quenching than lemonade because it lacks tartness and that sugary aftertaste. It’s perfect for a hot summer day.

And can we talk about the color? Bright, vibrant and beautiful. I prefer using more peaches than pineapple — too much pineapple can overpower the delicate sweet peach flavor. It’s like drinking peach pie in a glass, but lighter: fruit, water, mint and lime.

Fine. If you want, add a splash of tequila.

Pineapple Peach Agua Fresca

Ingredients

  • 3 ripe peaches, peeled and cubed
  • 1 cup fresh pineapple chunks
  • 2 cups water
  • 3 limes, juiced
  • 2 tablespoons simple syrup
  • 1 cup frozen peach slices
  • fresh mint
  • lime slices for serving

Instructions

  • To make simple syrup, combine equal parts sugar and water (for example, 1/4 cup each) in a small saucepan over medium heat. Whisk until the sugar dissolves, simmer for a minute, then remove from heat and cool completely.
  • Add the peaches, pineapple and 1 cup of water to a blender and puree until smooth. Strain the puree through a fine-mesh sieve into a large bowl or measuring cup, pressing with a spoon to extract the liquid. Combine the strained juice with the remaining water, lime juice and simple syrup in a large pitcher. Taste and add more syrup if desired. Chill until cold. Before serving, add the frozen peach slices (they act as ice cubes) and a few regular ice cubes if you want it extra cold.
  • Serve over crushed ice with extra lime slices and fresh mint.
