I’m really into matcha right now. I briefly tried avoiding coffee (for all of two weeks), but matcha gives me steady energy without the crash, and the flavor is growing on me. I’ll probably keep sweetening it for a while, but the bright vegetal notes paired with a bit of honey are so appealing.
We could get there!

For now, I like to shake matcha with honey, vodka and ginger kombucha and drink it like it’s my favorite thing. Isn’t that color gorgeous? Try this next weekend for St. Patrick’s Day instead of green beer or neon cocktails — it’s fresher and far more enjoyable.
I speak from experience: green beer does not end well.

Vodka felt like the best spirit to pair with matcha. I’m not the biggest vodka enthusiast in general, but when I want something that won’t overpower odd or delicate flavors, vodka is perfect — it lets the other ingredients shine. That clean profile works beautifully with the honey, matcha and the spicy bite of ginger kombucha.
Plus, I’d already had this combo and knew it was a winner.

Does anyone else get a nostalgic hit of Ecto Cooler from the 90s when they see this color? Please tell me I’m not the only one.

The flavors here feel bright and springlike. Matcha can taste grassy, but when balanced with honey, lime and the effervescence of ginger kombucha, it becomes lively and refreshing. A few mint leaves add a subtle herbal lift as they sit in the glass — it all comes together in a light, invigorating way.

Ingredients
- 2 ounces vodka
- 2 teaspoons honey
- 1/4 teaspoon matcha powder
- 8 ounces ginger kombucha
- 1 lime, cut into wedges
- A handful of fresh mint for garnish
Instructions

Add the vodka, honey and matcha powder to a cocktail shaker. Shake for at least 30 seconds until the matcha dissolves. If you like, add ice and shake 20 seconds more.

Fill two chilled glasses with ice and divide the matcha vodka between them. Squeeze in juice from a lime wedge, top with ginger kombucha and garnish with fresh mint leaves. Serve immediately.
