I need some help over here.

Maybe it has something to do with the pollo fundido entree I ordered last night—fried tortillas stuffed with chicken and cheese, topped with sour cream and more cheese—after three baskets of chips and salsa.
Pollo fundido indeed.
I kind of think I’m having a heart attack.
Not even joking.

I was about to post my third bacon-infused recipe this week when it hit me I’ve been a little too friendly with pork lately. Didn’t think it was possible? Me either. My jeans say otherwise. Ho. Ly. Cow.
I just can’t do it.
Help me.

Not that I’d ever envision taking a break from a crispy slice of heaven, but today I need something refreshing that doesn’t make me feel like I need a triple stent. That dinner did a number on me—just the thought of cheese, pork, and cheesy pork is making me a little teary. Mostly happy tears, but I’m really craving a juicy apple.
That never happens. Maybe this is the turning point?

The only options in my photo library are bacon, butter, cake and piles of panko and cheese. No can do today. I need my space—an entire couch to myself, sweatpants, and maybe a sewing kit for the waistband. Honestly, I might just order some pajama jeans.

What healthy recipes are your favorites right now? I need lightened-up goodness—something fresh, satisfying, and different from the usual kale chips or banana “nice cream.” I like those, but I’m ready for something new and delicious.
