Ingredients

  • 2 cups mashed potatoes
  • 1/3 cup flour
  • 1 large egg, lightly beaten
  • 4 slices cooked bacon, crumbled
  • 3 tablespoons crumbled blue cheese

Instructions 

  • Heat the waffle iron to its highest setting.
  • In a large bowl, combine the mashed potatoes, flour, beaten egg, crumbled bacon and blue cheese. Season with salt and pepper if needed — it depends on how your mashed potatoes were seasoned. If the mixture seems very buttery or wet, add a touch more flour until you have a soft, sticky dough. Place a scoop in the center of a hot waffle iron, close the lid and cook 3 to 4 minutes, until crisp on the outside. Repeat with the remaining mixture.
  • Serve warm with additional crumbled bacon, blue cheese and a fried egg on top.
