Today I’m sharing a recipe from Seriously Delish. It’s hard to believe the last recipe I posted from the book was almost four months ago, and I wanted to share something indulgent while still keeping a few favorite book recipes under wraps.

I’m calling this one a trashy sandwich — in the best possible way. I’m currently obsessed with peaches and nectarines and their fleeting season, and this grilled cheese celebrates them.

This is a fruit grilled cheese and I love it. Peaches are caramelized in brownish butter with brown sugar, then layered with creamy mascarpone and plenty of dark chocolate. It’s all pressed between slices of crusty bread, because everything is better on toast.

You can customize it: add brie, mix vanilla bean paste into the mascarpone, sprinkle cinnamon on the peaches — go wild until your heart is satisfied.

Caramelized Peach, Mascarpone and Dark Chocolate Grilled Cheese

Ingredients

  • 3 tablespoons unsalted butter
  • 2 large peaches, sliced
  • 3 tablespoons brown sugar
  • 1/3 cup mascarpone cheese
  • 3 ounces dark chocolate, chopped
  • 4 slices bread
  • softened butter for spreading

Instructions

  • Heat a large skillet over medium heat and add the butter. Once melted, add the peach slices and flip so they’re coated in butter. Cook 3 minutes until the peaches start to soften, then sprinkle on the brown sugar. Flip once more so both sides are coated. Continue cooking 5 to 6 minutes, flipping once or twice, until the peaches are golden and caramelized.
  • Butter the outside of the bread slices. Spread the mascarpone on the inside of each slice. Assemble the sandwiches by layering the caramelized peaches over the mascarpone, then sprinkle the chopped chocolate on top. Cover with the second slice of bread and return to the skillet over medium heat. Cook until the bread is golden and the filling is warm and melty, carefully flipping so the peaches don’t fall out.
  • Note: add a little brie on top of the mascarpone if desired — it’s delicious.
