Ingredients

  • 1/2 cup fresh cranberries
  • 2 tablespoons pomegranate juice
  • 1 tablespoon sugar or honey or maple syrup
  • 1/2 teaspoon fresh lemon zest
  • 1 11 ounce goat cheese log, softened
  • a pinch of salt and pepper
  • 2 tablespoons pomegranate arils for garnish
  • fresh rosemary for garnish
  • bread crackers and/or chips for serving

Instructions 

  • Place the cranberries, pomegranate juice, sugar (or honey/maple syrup) and lemon zest in a small saucepan over medium heat. Cook, stirring occasionally, until the cranberries soften and break down into a thick, saucy mixture, about 8–12 minutes. Remove from heat and let cool completely.
  • In the bowl of a food processor, pulse the softened goat cheese until it begins to come together. Process until smooth and whipped, adding a pinch of salt and pepper. Add about 1/4 cup of the cooled cranberry mixture and pulse a few times to combine. Blend until completely smooth for a uniform color, or pulse less for a slightly chunky texture. Taste and add more cranberry mixture if you prefer a stronger fruit flavor.
  • Transfer the whipped goat cheese to a serving bowl or jar. Refrigerate covered if making ahead — it can be chilled overnight. When ready to serve, garnish with pomegranate arils and fresh rosemary, and offer with seeded crackers, bread, or chips. Enjoy!
