Buckle your seat belts, folks — we’re taking French toast to a whole new level.

Not long ago I was making Mr. How Sweet eight pounds of healthy, crunchy chicken fingers when a glance at the side of a Kellogg’s Corn Flakes box stopped me in my tracks. There was a recipe for crispy French toast and I couldn’t get it out of my head.
And yes — eight pounds. He eats an alarming amount. No, I’m not joking.

So I broke out the corn flake crumbs again.
If you want a slightly healthier version, use whole wheat or Texas-style whole grain bread and swap in a whole grain or spelt flake cereal crushed into crumbs. But it was the holidays, and I wasn’t in the mood to be virtuous.

Clearly I didn’t choose the healthy route — I used Texas toast.
I’ll admit: I don’t even like plain white bread unless it’s Texas toast.

At first I planned to make peanut butter French toast. Look at that crunchiness up there.
Then my instincts took over and I couldn’t help myself. I had to take it further.

It hurt so good.

Picture this: soft, pillowy bread inside, crisp and utterly crunchy outside, slathered in warm, melty peanut butter and oozing with silky chocolate.
It really doesn’t get much better.
Am I right, or am I right?

Crispy Chocolate Peanut Butter French Toast

Ingredients
- 4 slices thick bread
- 2 tablespoons butter
- 3 whole eggs
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 tablespoon cinnamon
- pinch salt
- 1/4 cup sugar
- 1 cup corn flake crumbs
- 1/4 cup peanut butter, melted
- 2 tablespoons chocolate chips, melted
Instructions

In a large bowl, whisk together the eggs, milk, cinnamon, salt and vanilla. On a plate, combine the corn flake crumbs and sugar; mix well.

Preheat a large skillet over medium-low heat. Dip each slice of bread into the egg mixture, soaking about 60 seconds per side. Remove from the egg and thoroughly press into the corn flake crumb mixture to coat.

Add 1 tablespoon butter to the skillet and cook the coated bread until golden brown, about 2–3 minutes per side. Repeat with remaining bread, using the remaining tablespoon of butter as needed.

Top the French toast with melted peanut butter and melted chocolate. Serve immediately and enjoy.
