Hickory dickory dock

This blog post is a bit of a mess, but the recipe is excellent.

I stayed up too late, but it was worth it — this dish is simple and flavorful.

The combination of honey and lime brightens the tilapia and gives it a lovely glaze.

Crispy Honey Lime Tilapia

Ingredients
- 4 fresh or thawed tilapia filets
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 2 garlic cloves, crushed
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/3 cup flour (whole wheat pastry flour works well)
- 2 tablespoons olive oil for frying
- additional honey and lime zest mixed for drizzling
Instructions

About 60 minutes before cooking, season the tilapia filets with salt and pepper and place them in a baking dish or large zip-top bag. In a bowl, whisk together 2 tablespoons olive oil, 2 tablespoons honey, 2 tablespoons lime juice, lime zest, and crushed garlic. Pour the mixture over the tilapia and let it marinate for one hour. In a separate bowl, mix the flour with a little extra salt, pepper and lime zest, and set aside.

Heat a cast-iron or nonstick skillet over medium-high heat and add 2 tablespoons olive oil for frying. Lightly dredge each piece of tilapia in the flour, shaking off excess so the coating is thin. When the pan is hot, add the filets and cook until crispy and flaky, about 3–4 minutes per side. Transfer to a paper towel to drain for a few moments.

Serve the tilapia with an extra drizzle of honey and lime zest. This pairs beautifully with a fresh salsa or a simple side salad.
