I’m completely obsessed.

It’s officially iced coffee season, and I couldn’t be happier. I wish I could sip iced coffee all day without the unpleasant aftereffects, but I cherish my afternoon iced coffee rituals more than anything. I’m not a morning coffee person—I need those afternoon jitters.

Vietnamese iced coffee is one of my favorites. While special beans might be part of the appeal, for me the real magic is the sweetened condensed milk poured over ice-cold coffee. That combination is outrageously delicious.

Since I love coconut in almost everything, and especially coconut milk, I wanted to recreate that Vietnamese-style sweetness using coconut milk. It’s simple to make at home, and you can double the batch and keep it in the fridge all week for summer iced coffees.

One great benefit: this sweetened condensed coconut milk holds together better in iced coffee than plain coconut milk. While there might be slight separation after it sits for a while, it doesn’t separate immediately the way regular canned coconut or almond milk often does when added to coffee.
For those who remember when chains started offering coconut milk and it turned out to be full of additives and not what people expected—this homemade version fixes that. Use canned full-fat coconut milk and a little sugar, and you’ll have a clean, simple sweetened condensed coconut milk you control.

- 1 (15-ounce) can full-fat coconut milk
- 2 tablespoons sugar

Combine the coconut milk and sugar in a saucepan and warm over medium heat. Whisk constantly until the sugar dissolves, then bring the mixture to a gentle boil. Reduce the heat to maintain a light simmer and cook for about 1 hour and 15 minutes, stirring every 10 to 15 minutes to prevent a film from forming. The liquid should reduce by roughly half and become slightly thick; it will set and thicken further after chilling.

This homemade version becomes as thick as store-bought sweetened condensed milk, though it may be a bit less pourable due to the absence of stabilizers. If you prefer a thinner consistency for coffee, stir in a splash of milk before serving.
